Almond and Rice Bars

I wanted to send you salad and soup recipes this month, but the dessert won the day for this January edition. I found a book of “healthy and sweet” recipes in a bookstore and I wanted to try the different ideas with you.

So here are some small squares (or bars, it depends on how you cut them in the end) very simple to make, without sugar of course and no need to bake them either!

These are dessert ideas, as we have seen with date and cocoa balls etc. which give great alternatives to our children (and to us, we also want to spoil ourselves!) in a house that no longer lets in refined sugar (the “bad sugar” see Sugar No More). People tend to say: “but how do you do, the poor children need sweets!” well can you imagine that mine are still very much alive and they are very happy to have this kind of homemade desserts  (from time to time 🙂

List of ingredients

  • 100 g of almonds or 4 tablespoons of peanut butter.
  • 3 spoons of coconut oil
  • 3 spoons of cocoa
  • 1/3 cup date honey
  • 2 cups of rice nuggets (rice crispies style but without sugar or salt:

Home Made Bars Recipe

The first step is interesting: you have to put the almonds in the oven at 180 degrees Celsius for a few minutes, until they tan a little. Then you grind them (if they weren’t before) and mix them in a bowl with the coconut oil and cocoa. We also add date honey to get a good consistency. We also mix with the nuggets of rice and we keep a little aside to sprinkle on the bars at the end. Everything is put in a mold to go in the freezer for a few hours, until it hardens. You can also put a drizzle of date honey or peanut butter on top as a decoration…

Then it’s just a matter of cutting the frozen rectangle (not obvious!) into squares or bars… You’ll enjoy it! Here is the photo, with the hand of my little girl who is just waiting for me to finish taking the photos to help herself first!
