Ingredients:
- 1 cup green lentils

- 3 cloves garlic, minced
- 1 tbsp ground cumin
- 1 tsp paprika
- 1 tsp turmeric
- 1 liter vegetable broth
- 1 can crushed tomatoes
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 handful fresh cilantro for garnish (optional)
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until they are tender.
- Add the garlic, cumin, paprika, and turmeric, and cook for 1 minute.
- Stir in the lentils, vegetable broth, and crushed tomatoes. Bring to a boil.
