INGREDIENTS:
– 1 ½ cups raw cashews, previously soaked for 4 hours
– 1 cup of water
– 2 tablespoons lemon juice
– 2 tablespoons apple vinegar
– 2 tablespoons of nutritional yeast in flakes
– 1 small clove of garlic
– 1 tablespoon each of the following chopped herbs: fresh chives, fresh cilantro (substitute dill if desired) and flat leaf parsley
– 1 teaspoon salt
PREPARATION:
Rinse and drain pre-soaked cashews. Place all ingredients except fresh herbs in a food processor and puree. Transfer to a bowl and add finely chopped fresh herbs as desired.
–> Makes about 2 cups of dip, enough for a large raw food platter.
