The World Health Organization published on their website the results of a study by IARC concerning the effects of red meat and processed meat on health.
To use the terms the WHO used: there is convincing evidence that processed meat causes cancer. This includes: hot-dogs, sausages, ham, corned beef, meat-based sauces
An interesting fact: every 50 gram portion of processed meat eaten daily increases the risk of colorectal cancer by about 18%.
Indeed, during the meat processing, carcinogenic chemicals are formed, as well as during the cooking stage.
The IARC Working Group – of 22 experts from 10 countries- considered more than 800 different studies on cancer in humans. The comparative study also included the effects of red meat on health but the link with cancer wasn’t as conclusive as with processed meat.
