Ingredients :
- 150g white beans 1 teaspoon of bicarbonate
- 850g potato
- 2 tablespoons of potato starch
- 1 tablespoon of Provencal herbs
- 2 cloves of garlic (optional)
- Breadcrumbs
- Salt and pepper
Preparation :
The day before, soak the white beans in water with the bicarbonate. Rinse, then place in a pot of water and cook for 40 minutes over low heat.
Peel the potatoes, cut them into large pieces and place in a saucepan then cook over medium heat for 20 minutes. Drain the potatoes and beans well, then mash together. Add the potato starch, Provencal herbs, crushed garlic if desired.
Add salt and pepper, then mix everything to form croquettes.
Preheat the oven to 180c. Oil a baking tray and place the croquettes on it after rolling them in breadcrumbs. Bake for 15 minutes.
Remove the tray from the oven and turn the croquettes over.
Bake again for 15 minutes.
Serve hot with a salad of your choice.
