. 2 firm, ripe yellow peaches, peeled and sliced
. 1 bunch of arugula (or other salad of your choice)
. 60g feta cheese
. 2 tablespoons pine nuts (or pumpkin and sunflower seeds)
. Olive oil
. Balsamic vinegar
. Salt and pepper
In a small bowl, beat the oil, balsamic vinegar, salt and pepper to taste with a fork and set aside. Arrange the arugula salad in a dish and sprinkle with feta cheese and pine nuts. In a very hot skillet, sear the peach slices for a few seconds on each side with 1 teaspoon of olive oil, then arrange them on the dish. Finish by seasoning the dish with the vinaigrette previously prepared.
