Beetroot has draining and even laxative effects which can help you with digestion. As for sweet potatoes, they have a lower glycemic index than potatoes, which makes them a good slimming food.
Ingredients (for 1 person) :
70 g raw best 80g sweet potato 1 clove of garlic 100ml coconut milk Vegetables soup 5ml coconut oil 1 teaspoon crushed ginger Salt and pepper
Preparation :
Peel the sweet potato and beetroot, then cut them into small cubes. Crush the garlic clove. In a casserole, heat the coconut oil and sauté the vegetables, ginger and garlic for 5 minutes until they take on a nice color. Cover with the broth and simmer over low heat for 30 minutes. At the end of cooking, the vegetables should be very tender. Add the coconut milk then season. Mix the soup, adding more or less broth depending on your taste: a thick velouté or a more liquid soup
