Vegetarian Lentil and Spice Soup

Ingredients:
  • 1 cup green lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tbsp ground cumin
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 liter vegetable broth
  • 1 can crushed tomatoes
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 handful fresh cilantro for garnish (optional)
Instructions:
  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until they are tender.
  2. Add the garlic, cumin, paprika, and turmeric, and cook for 1 minute.
  3. Stir in the lentils, vegetable broth, and crushed tomatoes. Bring to a boil.
  4. Reduce the heat, cover, and simmer for about 30 minutes, or until the lentils are tender.
  5. Season with salt and pepper. Garnish with fresh cilantro if desired.
