Low-Sugar Homemade Oreo

Ingredients for 20 cookies:

  • 150 g of butter
  • 250 g of almond flour
  • 2 eggs
  • 20 g of cocoa powder, sweetened to 60%
  • 125 g of mascarpone
  • 2 tbsp of agave syrup (optional)

Preparation:

Preheat your oven to 180°C (350°F).

For the cookies:

Melt 120 g of butter in a double boiler. In a bowl, mix the cocoa powder, almond flour, 1 tbsp of agave syrup, eggs, and melted butter. Spread a sheet of parchment paper on your work surface. Place the dough on it, cover with another sheet of parchment paper, and roll it out with a rolling pin. Use a cookie cutter to cut out circles from the dough. Repeat until all the dough is used. Bake the cookies for 10 minutes at 180°C.

For the cream:

Melt 30 g of butter in a double boiler. In a bowl, mix the melted butter, mascarpone, and the remaining agave syrup, if using, with a whisk.

Assembly:

Once the cookies are baked, let them cool for 15 minutes. Place a bit of cream in the center of one cookie and immediately cover with a second cookie. Repeat until all cookies and cream are used.
