Immunity-Boosting Broth

Ingredients (for 2 liters):
- 2 L filtered water
- 4 celery stalks
- 1 leek
- 1 spring onion
- 1 tbsp coconut oil
- 1 tbsp unpasteurized miso
- 2 garlic cloves, grated
- 1 cm fresh ginger, grated
- 1 cm fresh turmeric, grated
- A small handful of spinach shoots
- 2 tbsp apple cider vinegar
- A pinch of thyme
Preparation:
- Bring the water to a boil in a pot. Slice the celery, leek, and spring onion.
- Add them to the boiling water with coconut oil, miso, and grated garlic.
- Simmer gently for 20 minutes to allow the flavors to develop.
- Add the ginger, turmeric, and spinach shoots.
- Serve hot, adding apple cider vinegar just before enjoying.
