Step-by-Step Recipe
- Prepare the Garlic
Peel fresh, firm, organic garlic cloves. The quality of ingredients is essential for successful fermentation. - Fill the Jar
Place the cloves in a clean jar without filling it to the top. - Add the Honey
Completely cover the garlic with raw, unpasteurized honey. Leave about a quarter of the jar empty to allow for natural expansion during fermentation. - Let it Ferment
Close the jar and leave it at room temperature for 3–4 weeks, or longer depending on your taste. - Release the Gases
During the first week, slightly open the lid once a day to release gases, then close immediately.
What Happens During Fermentation?
After a few days, small bubbles appear — a normal and reassuring sign that fermentation is active. Over time, the honey becomes more fluid and turns a beautiful amber color, while the garlic cloves candy and become soft.
Fermented garlic in honey can be consumed after one month, but it continues to evolve and enrich over time. Several months of fermentation (2, 6, or even 12 months) produce an even milder and more flavorful product.
