Apricot Mousse: A Light and Fruity Dessert

Enjoy all the sweetness of summer with this apricot mousse—both airy and full of flavor. Easy to prepare, it highlights the freshness of ripe fruit and adds a light, delightful touch to the end of any meal.

Ingredients for 4 servings

8 large ripe apricots

3 to 4 heaping tablespoons of honey or agave syrup

1 heaping tablespoon of white almond butter

Plant-based milk of your choice

1 level teaspoon agar-agar

Preparation

Cut the apricots into quarters, removing the pits. Place them in a saucepan with the honey, cover, and let simmer gently for 8 minutes. Strain and reserve the juice.
Blend the cooked apricots with the almond butter. Weigh the juice and add enough plant milk to reach 150 g of liquid. Add the agar-agar, return to the saucepan, and bring to a boil. Let simmer for a few seconds, then blend together with the apricot mixture.
Divide into small bowls and let cool at room temperature. Refrigerate for 4 hours. Serve chilled.
