Ingredients (Serves 6)

  • 5 kiwis
  • 2 eggs
  • 20 cl (¾ cup) cold heavy cream
  • 150 g (⅔ cup) plain yogurt
  • 75 g (⅓ cup) xylitol (birch sugar)

Instructions

  • Peel the kiwis. Blend 3 kiwis into a smooth purée and dice the remaining 2 kiwis.
  • Whip the cold heavy cream until stiff peaks form. Refrigerate until ready to use.
  • Separate the egg whites from the yolks. Beat the egg whites with half of the xylitol until stiff peaks form.
  • Whisk the egg yolks with the remaining xylitol until pale and creamy. Stir in the yogurt, then gently fold in the beaten egg whites, followed by the whipped cream.
  • Line a loaf pan with parchment paper. Pour in half of the mixture, add the kiwi purée, then fold the diced kiwi into the remaining mixture and pour it over the purée.
  • Freeze for at least 12 hours.
  • Unmold, slice with a knife dipped in hot water, and serve immediately.
