Yamitsuki, which translates to “something you can’t live without,” is the term used by the Japanese to describe this addictive salad. It’s a true explosion of flavors that captivates with every bite and quickly becomes essential for those who taste it!
Ingredients: (for 4 servings)
- 1/2 white cabbage
- 1/2 tsp salt
- 3-4 tbsp sesame seeds
- 1 tsp light miso
- 2 cloves garlic, minced
- 2-3 tbsp sesame oil or toasted peanut oil
- 1 spring onion, finely sliced
- 1 tsp sugar (optional)
- A few turns of the pepper mill
Preparation:
Thinly slice 1/2 white cabbage, then massage it with 1/2 tsp of salt for a few minutes. Let it rest for 5 minutes and then drain off the accumulated water. Toast 3-4 tbsp sesame seeds in a dry pan over medium heat, stirring regularly until they release a pleasant toasted aroma. Add the sesame seeds to the salad, then mix in 1 tsp of light miso, 2 minced garlic cloves, 2-3 tbsp sesame oil or toasted peanut oil, and 1 finely sliced spring onion. For extra flavor, add 1 tsp of sugar and a few turns of the pepper mill. Mix well and serve.
