Pumpkin Seed Pesto

11/02/2024

Pumpkin seeds, often overlooked, are true nutritional treasures that deserve a prominent place in our diet. Rich in antioxidants, healthy fats, and essential minerals like magnesium, zinc, and iron, they offer a multitude of health benefits. Here’s an exquisite recipe for pumpkin seed pesto, perfect for adding a touch of originality to your dishes!

Ingredients

  • 1 cup of raw, unsalted pumpkin seeds
  • 2 cloves of garlic
  • 1/4 cup of fresh basil
  • 1/4 cup of grated parmesan cheese
  • Juice of half a lemon
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Preparation

  1. Blend the ingredients: In a blender or food processor, combine the pumpkin seeds, garlic, basil, parmesan, and lemon juice until you achieve a gritty consistency.
  2. Add the olive oil: Gradually add the olive oil while continuing to blend until the mixture becomes smooth and creamy.
  3. Season: Adjust with salt and pepper to taste.

Serving Suggestions

Serve this pumpkin seed pesto with pasta, grilled vegetables, or as a spread for sandwiches.

Pesto Storage

Pumpkin seed pesto can be stored in the refrigerator in an airtight container for about 5 to 7 days. If you wish to keep it longer, you can freeze it in ice cube trays or freezer bags for up to 3 months.
